Pineapple Upside Down Cake with Box Cake

A quick and easy version of the classic pineapple upside down cake made using a box cake mix for convenience.

Ingredients
  

Topping
  • 1 can sliced pineapple in juice, drained
  • 1/2 cup brown sugar packed
  • 1/4 cup butter melted
  • 10 slices maraschino cherries optional
Cake
  • 1 box yellow cake mix plus ingredients as per package instructions
  • 3 large eggs as per package instructions
  • 1/2 cup vegetable oil as per package instructions
  • 1 cup water as per package instructions

Method
 

Prepare the Topping
  1. Preheat the oven to 350°F (175°C).
  2. In a small bowl, mix the melted butter and brown sugar until combined.
  3. Pour the mixture into the bottom of the cake pan.
  4. Arrange the pineapple slices over the brown sugar mixture and place a cherry in the center of each pineapple slice.
Make the Cake
  1. In a mixing bowl, combine the yellow cake mix, eggs, vegetable oil, and water as per package instructions.
  2. Mix until smooth and well combined.
  3. Pour the cake batter over the pineapple and brown sugar mixture in the cake pan.
  4. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
Finish the Cake
  1. Remove the cake from the oven and let it cool for 10 minutes.
  2. Carefully invert the cake onto a serving plate while it is still warm.
  3. Serve warm or at room temperature.

Notes

For a richer flavor, you can add a teaspoon of vanilla extract to the cake batter.
