Method
Prepare the Ribs
- Remove the membrane from the back of the ribs for better flavor absorption.
- In a bowl, mix all dry rub ingredients together.
- Rub the dry mixture generously over both sides of the ribs.
Preheat the Grill
- Preheat your Pit Boss pellet grill to 225°F (107°C).
Smoke the Ribs
- Place the ribs on the grill grates bone side down.
- Smoke for 3 hours, maintaining the temperature.
Wrap and Continue Cooking
- After 3 hours, wrap the ribs in aluminum foil and return to the grill.
- Cook for an additional 1.5 hours.
Add Sauce and Finish
- Unwrap the ribs and brush with barbecue sauce.
- Cook for another 30 minutes to set the sauce.
- Check internal temperature; it should be at least 190°F (88°C).
Serve
- Remove ribs from the grill, let rest for 10 minutes, then slice and serve.
