Ingredients
  

  • 2 lbs pork shoulder, cut into large chunks
  • 1 can (15 oz) hominy, drained
  • 4 cloves garlic, minced
  • 3 dried guajillo chiles, stems and seeds removed
  • 2 dried ancho chiles, stems and seeds removed
  • 1 yellow onion halved
  • 1 cup shredded cabbage for garnish
  • 2 lime wedges lime for garnish

Method
 

  1. In a large pot, cover pork shoulder with water, add salt and half of the onion. Boil then simmer for about 2 hours until tender.
  2. Soak dried chiles in hot water for 15 minutes. Blend softened chiles with garlic and some soaking water until smooth.
  3. Shred cooked pork and return it to the pot along with blended chile mixture and drained hominy. Stir well.
  4. Let everything simmer for another hour to meld flavors together.
  5. Chop cabbage and slice lime while pozole simmers.
  6. Ladle pozole into bowls and let everyone add their desired toppings.

Notes
