- In a large pot, cover pork shoulder with water, add salt and half of the onion. Boil then simmer for about 2 hours until tender.
- Soak dried chiles in hot water for 15 minutes. Blend softened chiles with garlic and some soaking water until smooth.
- Shred cooked pork and return it to the pot along with blended chile mixture and drained hominy. Stir well.
- Let everything simmer for another hour to meld flavors together.
- Chop cabbage and slice lime while pozole simmers.
- Ladle pozole into bowls and let everyone add their desired toppings.

Feel free to customize your pozole by swapping pork for chicken or using vegetable broth for a vegetarian twist. Toppings like radishes and avocado are great additions.
