  • 0.5 teaspoon salt
  • 1 cup canned pumpkin puree
  • 0.75 cups brown sugar
  • 2 large eggs
  • 0.33 cups vegetable oil
  • 8 oz cream cheese, softened
  • 0.5 cups powdered sugar

Method
 

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with paper liners or nonstick spray.
  2. In a large bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix pumpkin puree, brown sugar, eggs, and vegetable oil until smooth.
  4. Fold the dry ingredients into the wet mixture until just combined.
  5. In a separate bowl, beat softened cream cheese with powdered sugar until smooth.
  6. Fill each muffin cup halfway with batter, add a spoonful of cream cheese filling, then top with more batter.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
