Prepare the Gnocchi
- In a large bowl, mix pumpkin puree, egg yolk, and salt. Gradually add flour until you form a soft dough.
- On a floured surface, divide the dough into sections. Roll into ropes about 1 inch thick, cut into bite-sized pieces, and press each piece with a fork to create ridges.
- Boil salted water in a pot. Add gnocchi in batches; they are done when they float to the surface (about 2 minutes).
Make and Combine Pesto
- Blend sage leaves, toasted pine nuts, garlic, Parmesan cheese, and olive oil in a food processor until smooth. Season to taste.
- Toss drained gnocchi in pesto over low heat until well coated.
Serve
- Plate your pumpkin gnocchi with additional Parmesan or toasted pine nuts for garnish.
