Dough
  • 1 cup pumpkin puree
  • 1.5 cups all-purpose flour plus extra for dusting
  • 1 large egg yolk
  • 0.5 tsp salt
Sage Pesto
  • 1 cup fresh sage leaves
  • 0.25 cup pine nuts lightly toasted
  • 0.25 cup freshly grated Parmesan cheese
  • 2 tbsp olive oil

Method
 

Prepare the Gnocchi
  1. In a large bowl, mix pumpkin puree, egg yolk, and salt. Gradually add flour until you form a soft dough.
  2. On a floured surface, divide the dough into sections. Roll into ropes about 1 inch thick, cut into bite-sized pieces, and press each piece with a fork to create ridges.
  3. Boil salted water in a pot. Add gnocchi in batches; they are done when they float to the surface (about 2 minutes).
Make and Combine Pesto
  1. Blend sage leaves, toasted pine nuts, garlic, Parmesan cheese, and olive oil in a food processor until smooth. Season to taste.
  2. Toss drained gnocchi in pesto over low heat until well coated.
Serve
  1. Plate your pumpkin gnocchi with additional Parmesan or toasted pine nuts for garnish.
