Ingredients
  

Spring Rolls
  • 8 pieces rice paper wrappers round
  • 1 cup shredded carrots
  • 1 cup cucumber julienned
  • 1 cup red bell pepper julienned
  • 1 cup fresh cilantro chopped
  • 1 cup cooked vermicelli noodles
  • 1 cup lettuce leaves for wrapping
Peanut Sauce
  • 1/2 cup creamy peanut butter
  • 2 tablespoons soy sauce low sodium
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup for vegan
  • 1 teaspoon sesame oil
  • 2 tablespoons water to thin the sauce
  • 1 clove garlic minced
  • 1/2 teaspoon red pepper flakes optional

Method
 

Prepare the Spring Rolls
  1. Soak the rice paper wrappers in warm water for about 10-15 seconds until soft.
  2. Lay the softened wrapper on a clean surface and place a lettuce leaf in the center.
  3. Add a small amount of vermicelli noodles, shredded carrots, cucumber, red bell pepper, and cilantro on top of the lettuce.
  4. Fold the sides of the wrapper over the filling, then roll from the bottom to the top to enclose the filling.
  5. Repeat with the remaining wrappers and filling ingredients.
Make the Peanut Sauce
  1. In a mixing bowl, combine peanut butter, soy sauce, rice vinegar, honey, sesame oil, minced garlic, and red pepper flakes.
  2. Whisk together until smooth, adding water as needed to reach desired consistency.
Serve
  1. Arrange the spring rolls on a serving platter and serve with the peanut sauce for dipping.
