  • 4 ears corn on the cob husked
Toppings
  • 1/2 cup mayonnaise or Mexican crema
  • 1/2 cup cotija cheese crumbled
  • 1 teaspoon chili powder
  • 1 teaspoon lime juice freshly squeezed
  • 1 teaspoon cilantro chopped, for garnish

Method
 

Grilling the Corn
  1. Preheat the grill to medium-high heat.
  2. Place the husked corn directly on the grill and cook for about 10-15 minutes, turning occasionally, until the corn is charred and cooked through.
Preparing the Topping
  1. In a bowl, mix together the mayonnaise, lime juice, and chili powder.
  2. Once the corn is grilled, brush each ear with the mayonnaise mixture.
  3. Sprinkle the crumbled cotija cheese over the corn, followed by additional chili powder and chopped cilantro.
Serving
  1. Serve the street corn warm, garnished with extra lime wedges if desired.
