  • 3 tablespoons plain Greek yogurt
  • 1/2 each lemon juice

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Slice sweet potatoes into uniform rounds about half an inch thick. Toss with olive oil, salt, and pepper until well coated.

  4. While the potatoes bake, mix crumbled feta, Greek yogurt, lemon juice, and a pinch of salt in a bowl until smooth.
  5. Once the sweet potatoes are done, let them cool slightly before dolloping whipped feta on top. Serve immediately.
