Taco Lasagna with Tortillas

Ingredients
  

Meat and Sauce
  • 1 lb ground beef or ground turkey
  • 1 packet taco seasoning
  • 1 cup salsa your choice of mild or spicy
Layers
  • 6 large tortillas flour or corn
  • 2 cups shredded cheese cheddar or Mexican blend
  • 1 cup sour cream optional
  • 1 cup black beans drained and rinsed
  • 1 cup corn canned or frozen

Method
 

Prepare the Meat
  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add taco seasoning and salsa to the skillet. Stir to combine and simmer for 5 minutes.
Assemble the Lasagna
  1. Preheat the oven to 350°F (175°C).
  2. In a 9x13 inch baking dish, spread a layer of the meat mixture.
  3. Place 2 tortillas over the meat, then add a layer of cheese, black beans, and corn.
  4. Repeat the layers until all ingredients are used, finishing with cheese on top.
Bake
  1. Cover the dish with aluminum foil and bake for 20 minutes.
  2. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
Serve
  1. Let the lasagna cool for 5 minutes before slicing. Serve with sour cream if desired.
