  • 2 fillets salmon 6 oz each
Sauce
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 2 cloves garlic minced
  • 1 tsp fresh ginger grated
Grains
  • 1 cup cooked white or brown rice
Vegetables
  • 1 cup mixed vegetables broccoli, carrots, bell peppers

  • 1 tbsp oil for cooking

Cooking Steps
  1. Cook rice according to package instructions.
  2. In a small bowl, whisk together soy sauce, brown sugar, garlic, and ginger to make the teriyaki glaze.
  3. Heat oil in a nonstick skillet over medium-high heat. Add salmon fillets skin-side down and cook for 4-5 minutes until golden brown.
  4. Flip the salmon and drizzle teriyaki sauce on top. Cook for an additional 4-5 minutes until fully cooked.
  5. Sauté mixed vegetables in another pan until tender-crisp (about 3-4 minutes).
  6. Assemble bowls by adding rice topped with salmon and veggies. Drizzle with remaining teriyaki sauce before serving.
