Tinga

Tinga is a traditional Mexican dish made with shredded chicken, simmered in a smoky chipotle tomato sauce, often served in tacos or with rice.

Ingredients
  

Chicken
  • 1 lb boneless chicken breasts shredded
Sauce
  • 2 tbsp vegetable oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 can diced tomatoes
  • 2 tbsp chipotle in adobo chopped
  • 1 tsp oregano dried
  • 1 tsp salt to taste
  • 1 cup chicken broth
Toppings
  • 1 cup crumbled queso fresco
  • 1 cup sliced avocado
  • 1 cup chopped cilantro

Method
 

Prepare the Chicken
  1. In a large pot, add the chicken breasts and cover with water. Bring to a boil and cook for about 15-20 minutes until fully cooked. Remove the chicken and shred it once cooled.
Make the Sauce
  1. In the same pot, heat the vegetable oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  2. Add the diced tomatoes, chipotle in adobo, oregano, and salt. Simmer for about 10 minutes.
  3. Blend the sauce until smooth, then return it to the pot.
Combine and Serve
  1. Add the shredded chicken and chicken broth to the sauce. Stir well and simmer for another 10 minutes.
  2. Serve the tinga in tacos or on a platter, topped with queso fresco, avocado, and cilantro.

Notes

Tinga can also be made with pork or beef. Adjust the spice level by adding more or fewer chipotles.
