  • 1 cup whole wheat couscous
  • 1.5 cups low-sodium vegetable broth
  • 2 cups mixed seasonal vegetables (bell peppers, zucchini, carrots)
  • 2 tsp ground turmeric
  • 2 tbsp olive oil
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 425°F (220°C).

  4. Meanwhile, bring vegetable broth to a boil in a saucepan. Stir in couscous, cover tightly, and let sit for 5 minutes.
  5. Once the vegetables are done roasting and the couscous has fluffed up, combine them in a large bowl, mixing gently.
  6. Serve warm, garnished with fresh herbs if desired.
