Ingredients
  

  • 8 oz fresh mushrooms, sliced (shiitake and button)
  • 1 cup bell peppers, sliced (mixed colors)
  • 2 tbsp coconut oil for cooking
  • 3 cloves garlic, minced
  • 1/2 cup roasted unsalted peanuts can adjust the amount
  • 3 tbsp low-sodium soy sauce
  • 1/2 tsp red pepper flakes adjust to taste
  • 3 tbsp natural peanut butter
  • 2 tbsp fresh lime juice for added freshness

Method
 

  1. Clean and slice the mushrooms and bell peppers.
  2. In a large skillet, heat coconut oil over medium-high heat until shimmering.
  3. Sauté mushrooms for about 5 minutes until golden brown, then add bell peppers and garlic; cook for an additional 3 minutes.
  4. Stir in roasted peanuts and let toast for about 2 minutes.
  5. In a small bowl, whisk together peanut butter, soy sauce, lime juice, and red pepper flakes until smooth.
  6. Pour the sauce over the vegetables and mix well. Serve hot, garnished with extra peanuts if desired.
