  • 4 medium Vidalia onions sliced
  • 2 cups shredded cheddar cheese divided
  • 1 cup milk
  • 2 large eggs
  • 1 cup bread crumbs preferably seasoned
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil for greasing

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Grease a casserole dish with olive oil.
  3. In a mixing bowl, whisk together the eggs and milk.
  4. Add the sliced Vidalia onions, 1 cup of cheddar cheese, bread crumbs, salt, and pepper to the egg mixture and stir until well combined.
Baking
  1. Pour the mixture into the prepared casserole dish.
  2. Sprinkle the remaining cheddar cheese on top.
  3. Bake in the preheated oven for 45 minutes or until the top is golden brown and the casserole is set.
  4. Allow to cool slightly before serving.
