Salad Ingredients
  • 1 head romaine lettuce washed and torn into pieces
  • 4 slices bacon cooked and crumbled
  • 1 cup cherry tomatoes halved
  • 1 small red onion thinly sliced
Dressing Ingredients
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • to taste salt
  • to taste black pepper

Method
 

Prepare the Salad
  1. In a skillet, cook the bacon over medium heat until crispy. Remove and crumble the bacon, reserving the drippings in the skillet.
  2. Add the sliced red onion to the skillet and sauté for 2-3 minutes until softened.
  3. In a mixing bowl, whisk together the apple cider vinegar, olive oil, Dijon mustard, honey, salt, and pepper.
  4. Add the torn romaine lettuce, cherry tomatoes, and crumbled bacon to the skillet with the onions.
  5. Pour the dressing over the salad and toss gently until the lettuce is wilted and everything is well combined.
  6. Serve immediately in a serving dish.
